What can I do with...Avocado?

I like fresh guacamole with a dollop of hot black Beans on it -- something about the texture and temperature contrasts plus of course that jacks the Protein up.

Well, the avocados are delicious right now. I also bought a couple and today simply sliced half of one up and added it to my turkey / cheese / whole wheat sandwich.

Boy, was it good!

Mash it up w/a smidge of EVOO and use in place of mayo in tuna/chicken salad, sandwiches etc. Great sliced/cubed and in a salad with heart of palm and white asparagus (not sure if that is permitted?)

Use it on a sandwich instead of mayo or butter.

Had 1/2 an avocado diced with 1 diced hard boiled egg and a little red wine vinaigrette dressing (Wishbone). Satisfied my taste for lots of flavor and very filling.

You can put it in a Protein shake if you drink them. Doesn't really change the taste and make it crazy creamy-smooth. I used a lot of avocado early in maintenance when I was trying to add calories and good fat without bulk. Guac is a fav, on just about anything for me. I've seem people cook an egg in half an avocado, but that would be a lot for me in one sitting, size wize and fat wize. My gall bladder is on the edge, (may eventually need to come out :-() since WLS and too much fat, (even good fat) can be a bad thing now.

Thanks for the suggestion @bikrchik. I do drink Protein shakes and will keep this in mind. I don't use a blender for the majority of my shakes for simplicity sake, but I may give it a try with an unflavored Protein powder, veggie juice and avocado. I think that would be very filling and satisfying.

I mash mine up and mix with a little cottage cheese and some pepper!

Ooh, these sound interesting!

Next time I'll have to buy more than two. Thanks for all of the great suggestions!

Lord! We got through about 10 a week.. if not more. My 2.5 year old will eat a whole one with dinner.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
