Inner Surfer Girl 12,015 Posted January 12, 2016 I made my second trip to Aldi this week and came home with a couple of avocados. I like plain avocado, or a garnish or extra with Mexican food but don't buy them very often so am not quite sure what else I can do with them. How do you like to eat and/or prepare fresh avocado? AvaFern 3,516 Posted January 12, 2016 I gave up on avocado because it turns out I only really like it enough to justify the calories when it is in guacamole and then I like it with chips, which totally wipes out the little bit of healthiness. Yesterday Bobby Flay had an entire show of Brunch with Bobby that made avocado toast. To me it all looked gross, but he loved it. I tried what looked like an awesome recipe with avocado awhile ago. You take rice, a poached egg, and avocado and you swirl it all together. So. so. so. gross. But it looked good when I saw it on tv, lol. Share this post Link to post Share on other sites

Miss Mac 6,262 Posted January 12, 2016 I've done that meat and cheese wrap concept.....yes it is delicious.Just this week I made a cold salad with chickpeas, cherry tomatoes cut in half, diced carrots, diced celery, a little minced garlic and avocado. I used to use a lot of Ranch Dressing on my salads, but now I just rub the bowl with it before adding my salad. You probably need to be three - six months out to freely eat raw veggies. NewSetOfCurves 1,553 Posted January 12, 2016 Shrimp cocktail! Dice up that avocado into cubes, along with Tomato, onion, cilantro, and fresh jalapeno (optional, if you like a bit of a spicy kick!). Combine in a bowl and add a splash of lime and Tabasco, salt to taste, and V8 juice. Add your shrimp and you've got yourself a tasty and healthy meal or snack! (Preferably on top of rare ahi-tuna) I tried the bake the avocado with the egg in it. I thought it was really gross. RECIPE: Makes about 24 fries Here's what you need: - 3 Avocados (slightly firm) - 3 eggs - 1 cup flour - 1 cup panko bread crumbs - 1 tsp salt - 1/2 tsp cayenne pepper (adjust to taste, or substitute with garlic powder) - Pepper Directions: Slice the avocados in half, and then slice lengthwise into wedges. Mix the bread crumbs with the cayenne pepper and salt. Roll the slices in flour, then in the whisked eggs, then in the breadcrumbs. Place the slices on wax paper on a baking sheet. Spray well with cooking spray. Add a sprinkle of black pepper if desired. Bake for approximately 12 minutes at 400˚F/204˚C. Flip alway through and re-spray. Enjoy with your favorite dipping sauce!
