I have been craving the chicken salad I used to make but it has nuts and grapes in it which I can't quite tolerate yet. This was a good (but different) substitute. Thanks! I'm only a week post-op - but am compiling a little folder of recipes I'm so excited to try. Thank you all for not only your wisdom, advice & support - but also your yummy recipes!! millergirl314 168 Posted November 16, 2015 This time of year my favorite meal is ALWAYS elk tenderloin. Just got an elk last weekend, carved out the loin as soon as we got her out and took the rest to the butcher. Seared in a cast Iron pan with butter, salt and pepper, cooked rare and served with sautéed mushroom and roasted red potatoes. mmmmmm. I've only had elk once, hubby didn't get one this year but he did bring home a deer and let me tell you (which I'm sure you know) back straps wrapped in bacon are to die for!!!! Sophie74656 1,572 Posted November 16, 2015 a really good greek chicken recipe Marinade the chicken 2 hours in advance The marinade is a cup of greek yogurt, salt, the juice of one lemon, oregano, chopped garlic. Dice the chicken into about 1 inch pieces and put them in a bag with the marinade, toss it around so all the chicken is coated well. After 2 hours I put the pieces of check on a wooden skewer that I had soaked in Water ahead of time so they won't burn. In between the chicken I put pieces of bell pepper and red onion.
