So.... Let's share!

What is your favorite meal post op? If you can, post a recipe, or a general idea of what's in it. I've never differentiated breakfast/lunch/dinner so you don't need to either.

Low carb is definitely preferred, real food, not pre-made or frozen.

Simple recipes rule, crock pot recipes that the family loves are even better!

Mexican dip,

85/15 ground beef

Cumin

Salt

Pepper

One can green chilis

Chili powder

One chopped onion

2 cloves garlic minced

Brown beef and scoop into 8X9 baking dish.

Layer with:

Shredded cheddar

Half can green enchilada sauce

Can of rinsed pinto Beans

Shredded cheddar again

Chopped black olives

Chopped onion

Bake at 350 for 20 minutes.

Serve with with guacamole, shredded cheese, sour cream.

Serve with tortillas or chips for family.

Scoop, eat, enjoy!

The 'pizza' I posted under another topic earlier today is one of my 'go to' recipes...

8 inch tortilla

Fat reduced/light cream cheese

Smoked salmon

Spanish onion

Capers

Freshly grated parmesan cheese

Use the cream cheese as your pizza sauce

Then add your salmon, onion and capers

Top with parmesan

Dry-fry/toast pizza in a pan until the tortilla is crisp

Grill til the cheese melts

Eat half and give the other half to someone else...

My favorite snack is Dubliner cheese with Mary's Gone Crackers. That and Dannon Light & Fit strawberry Cheesecake Greek Yogurt. I never even imagined a flavor like that existed. Thanks to a vet who turned me onto that. I also like nearly anything with onions, celery, carrots, garlic and mushrooms in a little olive oil. That has been the start to many different dishes including slow roasted free range chicken (3 hours at 275 degrees).

Taco Casserole

Ingredients

1 lb ground turkey

1 small zucchini diced

1 small yellow onion diced

1 garlic clove minced

1 pkg taco seasoning

10 oz black Beans drained and rinsed

8 oz fat-free refried Beans canned

8 oz tomatoes & chiles canned

2 c Mexican blend cheese

Instructions

Preheat oven to 350 degrees

Spray a pan with non-stick cooking spray, set it over medium heat and allow it to get hot. saute veggies with garlic until they are softened. Drain any excess liquid and transfer to a bowl.

Brown ground meat, drain and then transfer to the same bowl and mix with canned beans and tomatoes and chiles.

Mix in taco seasoning thoroughly and then transfer mixture to a 13x9 casserole dish.

Evenly spread out fat free refried beans on top (this may be easier if you heat them in a microwave safe bowl for a minute or so.

Top with cheese and then bake in a 350 oven for about 30 minutes or until the cheese is oozy, melty and slightly browned.

Cool 10-15 minutes before slicing and serving.

Low Carb Breakfast Casserole

2 lbs ground sausage

8 ounces softened cream cheese

1/2 small onion, diced

2 jalapeno peppers, diced (or 1/2 green pepper)

12 well-beaten eggs (season with salt and pepper)

1 cup shredded cheese (cheddar or mexican blend)

Preheat oven to 350 degrees. Spray a 9 x 13 pan with non-stick cooking spray. Brown sausage and drain excess grease. Press sausage into the bottom of pan. Break cream cheese into pieces and evenly distribute on top of sausage. Sprinkle with onions and peppers. Pour eggs over the sausage mixture. Add shredded cheese to the top.

Bake for 25 minutes, until eggs are just set. Allow to cool for about 5 minutes before cutting.

marinated prosciutto wrapped shrimp

Grill mates baja citrus marinade

Large cocktail shrimp

Wrap with prosciutto

Place on bamboo skewers

Grill or bake

Lasagna. This is depending on how many calories and carbs your intake is for your plan

Ground turkey

Whole wheat Pasta ( 1 oz = 21 carbs) or egg plant Parmesan in layers to limit carbs. (eggplant, egg wash dipped in Parmesan cheese and bake before layering)

four cheese spaghetti sauce

Mozzarella cheese

Optional layer of ricotta or cottage cheese

Crock pot steel cut oats. I like them but could never get them as soft/creamy as I liked. Then I discovered making them in the crock pot. Nothing fancy. Just plain steel cut oats. 1 cup is enough for me and last for 2 or 3 meals. I like to rinse them before cooking. Dump in the crock pot with enough Water to cover. I toss in a cinnamon stick and a bit of salt. I also add about a quarter cup of raisins or dried cranberries and then an 11ounce container of RTD vanilla Protein powder or a scoop of vanilla Protein Powder dissolved in Water. 1 tbsp of brown sugar is an optional addition.

Stir well and cook on low overnight.

I also made a snack last night that hit my sweet spot.

2tbsp unsweetened shredded coconut. 1 scoop vanilla Protein Powder. 1 tbsp of water. Blend in nutra bullet until it makes a paste. Fold into half a cup of plain greek yogurt. It tasted like the insides of a mounds. Optional garnshes I plan to try: cacao powder and almond slivers.

One of my favorite dinners is black bean, topped with a fried egg, shredded cheese, dice tomatoes, dice avocado and 1 tbsp of greek yogurt.

@@jenn1 - Dang, I've always done that with bacon, but I'm going to have to give that one a try.

All my favorites deal with meat and burning wood. Preferably hickory. (A reminder to the ladies, men will always cook IF there is a element of danger)

This time of year my favorite meal is ALWAYS elk tenderloin.

Just got an elk last weekend, carved out the loin as soon as we got her out and took the rest to the butcher. Seared in a cast Iron pan with butter, salt and pepper, cooked rare and served with sautéed mushroom and roasted red potatoes. mmmmmm.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
