Low carb chicken parmesean

I made an outstanding home made low carb chicken parmesean tonight for dinner. My husband loved it and my pouch is very happy now!

I used almond flour/meal instead of flour and bread crumbs .

Here is the recipe:

1 large chicken breast (I love smart chicken brand) - boneless, skinless

1 egg

1/4 c milk or half and half

1cup almond meal

1/2 cup freshly grated parmesean cheese - all I had was Pecorino Romano and it was excellent!

Salt

Pepper

Olive oil

Fresh mozerella - chopped

Marinara sauce - I cook this by sautéing onions and fresh mushrooms and then adding my favorite jarred marinara sauce

I preheated the oven to 375.

I sliced the chicken breast to make a thinner filet using a sharp knife. This made two large chicken filets. Set up a breading station. Place 1/4 cup almond meal in one dish, 1 egg plus 1/4 cup milk whisked with a touch salt and pepper. In the last dish add 1 cup of almond meal plus the parmesean cheese. Mix well.

Place a shallow layer of olive oil in your frying pan and turn heat to med/high.

Place chicken breast first in plain almond flour, then dip both sides in egg mixture, then roll in almond flour/parm mixture until well coated. Repeat with 2nd slice of chicken.

When oil is hot but not smoking add both chicken breasts to pan and brown. You will finish this dish in the oven so you are just looking to brown your crust. Remove chicken from pan and place in baking dish. Spoon marinara sauce around the sides and a little on the top of each breast but don't cover them completely. Some of the crust should be peeking out.

Sprinkle with fresh mozerella and cover with foil. Place in 375 oven for 8 minutes. Remove foil and let bake another 7 to 10 minutes to brown cheese.

Do not over bake your chicken. Adjust the times accordingly. Mine was very juicy, tender and delicious!

Yum! Eat up! I was able to eat about 1/3 of one slice with some lovely green Beans with bacon and onion as my side. Very nice Italian dinner.< /p>

      Hi everyone! I’m brand new here. I just went through all my pre-op requirements per my insurance company and now everything has been submitted and I’m just waiting for final approval and my surgery date. I’ve been doing research, watching YouTube videos, TikTok’s, ect.. trying to prepare my mind and what to expect so I’ll be ready for the surgery. I was so sure and so set and so ready and excited. However, now that I’ve done everything & it’s almost here, I am sooooooo scared! I know why I want it bc I’ve tried everything and I just don’t feel like I can lose weight by myself. I’m tired of being overweight my entire life. I’m miserable, but I keep psyching myself out afraid of GERD bc I know how that can be and I don’t want to have to get a bypass after already gaining the courage to even get VSG. I’m scared of complications like I’mgoing to regret doing it and be depressed that I didn’t just be more disciplined and try again to lose the weight on my own even sitting here typing this knowing in my mind i just can’t and don’t possess the discipline. I’m also afraid I won’t be able to handle the restrictions of the sleeve. What do I eat? I don’t know how to eat healthy really and don’t enjoy healthy food. I don’t know how to do this! I feel so defeated!Someone tell me they felt anything similar to this or am I not ready? I thought I was. I am so tired of being sick and tired and so tired of myself and so tired of being stuck and stuck in this body and somebody different on the outside from what I feel inside. I just want to ball up and cry.

      The 14th was my day. I am home and recovery is going pretty smooth. They even let me walk out of the hospital. Picture of me in recovery curtesy of my boyfriend lol.

        Neat you have a pic of this day! I was sooo happy to get my surgery. It was well worth it! And I'm not even near my goal. I had surgery Dec. 2!
