Djmohr 6,965 Posted April 25, 2015 My favorite recipe for grilled chicken is Greek chicken.< /p> There is a marinade that you use that makes the chicken juicy and delicious on the grill. You can find the recipe on line by googling Greek chicken. I use the boneless, skinless breast. The marinade has olive oil, lemon juice, fresh garlic, fresh oregano, salt and pepper. I don't have any for that since I guess that is more just rubs and things, not actual recipes.< /p> But, if you want chicken recipes in general... Chicken Marsala The recipe is actually on the Marsala wine bottle. I usually double the liquid. 4 chicken cutlets (I don't always follow how much, just fill up the pan with flattened out chicken) 2 tbsp butter 2 cups mushrooms, sliced 1 1/2 cups Marsala wine 1/2 cup Water 2 tbsp fresh parsley chopped 1/2 tsp rosemary (optional) Pound the chicken so it is thin. The recipe calls for you to dredge the chicken in flour but sometimes I don't do that and it comes out the same way. In a large skillet, melt butter and saute mushrooms over medium heat until browned, 10 minutes. Remove and set aside. Add chicken (sometimes I add a bit of olive oil if the pan seems to be a bit dry). Cook through, probably about 4 minutes on each side if it is thin. Remove to serving platter. Return mushrooms to pan and stir in Marsala wine and Water, parsley and rosemary. Sometimes I thicken it up a little bit by using a mixture of corn starch and water in a little cup and pour in slowly while stirring, depends on how you like the sauce. Don't make it too thick. It should be pourable I then add the chicken back into the pan to get it warmed up again and mixed in with the juices. Put on a platter and serve. MMmmmm!! Chicken Stir Fry A couple of chicken breasts, cut up into cubes A bag of stir fry vegetables (or you can cut up your own veggies) Add some olive oil to a pan and heat up Add chicken and cook mostly through Add veggies and cook everything through Because I'm not good with stir frying, my pan tends to get dried up so I add some low fat, low sodium chicken broth to the mixture which adds some liquid into the pan but also adds some really great flavor Serve and enjoy! Smye 694 Posted April 25, 2015 (edited) Mix up a blend of 2 parts onion powder, 1 parts garlic powder, a dash of pepper, 2 dashes of salt, and a small handful of parsley. Rub down your pieces of chicken with this mixture, coat it beyond what you think might be reasonable and throw them on the griddle. It's super easy, super quick, and better than anything you can buy in the store. You can make up a LOT of this mix and store it in an airtight container for later use - you'll go through a lot of it.
