The tendon contains a lot of Protein. Your stomach can't digest the tendon yet, but it makes great broth with great protein just make sure they leave out the noodles! They really do vary. They are so comforting, they keep well and they are satifying. Bone broth is magical if you're familiar with the preparation. Pho varieties also offer chicken, beef and vegetarian broths for variety. If you reheat, you can stir in an egg and add some extra protein.
