Experiments in Charcuterie - Part 1

Anybody have any experience making their own prosciutto? Got any tips? I'll post the recipe when it's done. According to my calculations, about 20 minutes worth of work spread out over 2 weeks seems to be about what we'll need.

Duck's nearly done and the goat is up next! And holy cow (or duck, or goat) it turns out it's a piece of cake and is incredibly bariatric friendly!

Finished duck prosciutto coming later tonight, day one of goat prosciutto (an entirely different process) coming tomorrow, and right now, a photo update - what does 135 pounds look like? That, my friends, will blow your ever-loving mind!

Also, in working on a mix for my chickens, I think I stumbled across a kale smoothie that actually tastes AMAZING! More soon.

This thread (or whatever it's called) is great!! I'm 5 1/2 weeks post op and am tired of canned chicken and eggbeaters. I've been skimming all the pages and agree with everything I'm reading. I know I've been eating WAY too much processed food but it can be daunting to make full meals when I can only eat 1/4 of it, and the dog and the boyfriend both turn their noses up at it! Now that I'm able to eat a little more and am working out regularly I'm ready to eat healthier foods. I am horribly computer illiterate so I'm afraid I won't be able to find you ever again!! Is there an actual internet blog yet? Like can I go directly to your blog without coming here first?

@@Michelle920, Congratulations on having your surgery and being 5/5 weeks post-op!

I hear you regarding S.O.'s and pets rejecting our food - cooking and eating together has always been a big part of my relationship with my partner and when she first saw the suggested meal plans my NUT offered, her first reaction was "I guess we'll be eating separately then." Ouch.

Yes, there is a blog you can go to without going here first:

Do let me know what you think of the recipes you try, comment on any of the posts that intrigue you, and let me know if there's something you are wanting/missing that you just can't find a simple way to prepare bari-friendly and I'll see what I can do. The meatballs, spaghetti, catsup, waffles, and pastrami sandwich are all from reader requests. I've got a post coming up that's all about fat - whether it's a necessity or a villain post-op.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
