Salsa chicken

4 chicken breasts cut into little bites , boil or pam a skillet and fry until just a little under done

1 large jar of your favorite salsa

Add salsa to skillet and simmer while you fix rice. This is where the chicken is finished cooking.

Add chicken and salsa on top of rice. Enjoy. Reheats well too.

Low calorie and yummy.

Dont overcook the chicken or it will be "Rubber Chicken Salsa" lol.

Sometimes I use chicken tenders. The amount of chicken,salsa and rice to totally up to you.

Hamburger Surprise

Get 1 lb of 90/10 ground beef. Add 1 egg, breadcrumbs, worstcheshire (sp??), salt, pepper, and garlic. Mix all together in a bowl. Make 2 hamburger patties, one slightly larger than the other. Place the larger of the two patties in an 8x8 baking dish.

In a pan, saute onions, bell pepper, and mushrooms. Once veggies are done, place them on top of your larger patty. Cover with cheese (of your choice). Place smaller patty on top of veggies. Pull the bottom patty up to the top and pinch together (so that veggies and cheese are enclosed). Bake in oven for about 20 minutes (on 350).

I LOVE this recipe. . .it's like having a really good burger without the bread. I even put mustard and ketchup in my meat while I'm mixing it with everything else. You can just cut out a slice of it and enjoy!! Reheats really well too!! If you prefer lower carb, substitute the breadcrumbs with smashed pork-rinds.

Duckieduck, there is a whole food/recipe forum here, too.

I did a search on recipes and nothing came up. I will do another search before I continue with this forum .

Okay. . I should clarify that I have not had this recipe since my surgery (which was 05/31), BUT. . my nutritionist told me that beef is fine as long as it's at least 90/10. He also told me that I could have chicken breast, as long as it's moist. He said that dark meat would probably be better, but the moist white meat would be fine too. I am 2 weeks post-op, and on to soft foods, but my surgeon wants me to incorporate a different solid food with each meal. I have my first fill scheduled for 07/02 (just 2 1/2 weeks away)!!

Thanks for the recioes. I look forward to try these recipes when I am on solids. I have yet to find any soft food recipes. Seems like everything I eat just truns into GASSSSSSSSSSSSSSSS. I eat mostly fish, soft veggies, yogurt, low sodium V8, applesauce and scrambled eggs. I had my surgery 2 weeks ago and still stuggling with gas pains and Constipation. I would gladly accept any recommendations anyone has on this.

      Just been waiting until time for my consult with my bariatric surgeon. It's scheduled for Jan 9th. Turns out I won't actually be seeing him. Apparently it'll be with his P.A.             Not sure what to expect. I thought this is where the surgeon would discuss the best surgery option for me. For years I had my heart set on the sleeve, but I've read so many people have issues with reflux - even if they've never had it before - that they've had to be revised to the bypass. I already deal with GERD & take 40 mg of Omeprazole daily, so I started studying about bypass and honestly, it seems like it might be the better choice for me. How can we discuss surgery options if the surgeon is not there?
      What happened at your first consult? Trying to get an idea of what to expect, or maybe I should say, what NOT to expect.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
