I haven't used it since surgery, but I use that and a bunch of non traditional flours. I prefer buying then from Bob's Red Mill because they don't use GMO's. Coconut flour + Protein Powder + ricotta cheese makes a darn good pancake! I spread it with peanut or almond butter (no sugar added) and it's great pre race fuel when I run!
