Totally Vegan - Seitan Tomato Alfredo

I'm in the pureed stages and this is chewing very easily

http://proteinartist.com/2014/07/seitan-tomato-alfredo-28-grams-protein-per-4-ounce-meal/ I made it with a refrigerated seitan dough ball rather than mixing it fresh. I think it helps with the texture.

Please excuse my ignorance, but what the heck is seitan? Do you make it or buy it or what?

Link to the recipe doesn't work for me either, but the site looks great, and the recipe looks good too! When seitan is done well, it can be so good!

It's a sort of meat substitute made from wheat gluten. You can make it at home with vital wheat gluten (which you can buy at some supermarkets in the organic section or at other sorts of smaller organic markets), or you can buy it prepackaged. I'd say homemade is better. It's a great low carb, high Protein option for anyone who doesn't suffer from celiac.
