At my last meeting with my NUT, I asked about millet and how it compared with quinoa as a possible replacement for rice, Pasta, etc. She said she had honestly never been asked that question, and was going to do some research on it. So I though I'd ask here...anyone have any experience with millet? Nutritionally, it seems to compare quite well to quinoa (it is missing only Lysine, and has very similar stats, nutritionally)

So I was wondering if anyone has any experience with millet?

The only experience I have with Millet is feeding it to the birds... never tried it in any other form... :blink:

That was my only experience previously. But it's apparently a staple grain in other countries (the sixth most important grain crop world-wide). I saw a bag of it when I was checking out Bob's Red Mill, and picked it up out of curiosity. I'm not quite up to the stage where I can eat it yet (the NUT said about four or five months that I could introduce rice, Pasta or substitutes..but I would prefer healthier alternatives)

I haven't had millet in a while, but I love it! Millet muffins are my absolute favorite. But of course all my millet muffin recipes are full of wheat flour, sugar, etc. Here is a savory recipe I like a lot but I punch it up with lots of additional spices:

It's great served with carnitas or anything along those lines.

If you can find or make millet flour, it works well in meatloaf, meatballs, things like that.

I work with a lot of Indians who are Hindu. Millet is the choice grain there over quinoa but that's because its a local plant there.

Its gluten free (I'm stuck in that genre sigh)
Its not as high in Protein and Fiber, but very little difference
Its not a complete Protein since its missing lysine
Less fat than quinoa

Otherwise, its grown here in America whereas most of the others are from South America (from what I remember).

When you are talking about millet, you are talking about it with the hull not removed, IF I remember correctly ...

        Fairlife Core are by far the best. They taste just as they are - chocolate milk. You can either get the 26 grams or the 42 grams (harder to find and more expensive). For straight protein look at Bulksuppliments.com ..they have really good whey proteins and offer auto ship plus they test for purity. No taste or smell...
