Help, lunch ideas!

Hi All,

I am getting so bored with lunch and really need some new inspiration. I am fairly tight in the morning and don't eat much if anything. So by 1:00 or so I am getting hungry, but am having such a hard time coming up with new quick, easy and healthy lunches. I'd love to hear what others are having for lunch.

When I feel like a sandwich I'll toast an oroweat flatbread add some lite mayo with deli sliced turkey(smoked mesquite) and a slice of pepper jack cheese. Sometime I'll add a slice of red bell pepper to it.

I cook a lot of food when I cook so I lean on leftovers a lot. Stuffed peppers, salmon cakes, stir fry chicken and hamburger patties are my favs.

Other lunch ideas are chicken salad, tuna salad. Also, I had a smart ones for lunch today and I also eat a Progresso Soup once a week or so.

But I agree with you, it's difficult to think of good lunch choices especially when you're cooking or making lunch for just one.

I usually have leftovers since we cook dinner at home most nights ( hubby is diabetic, but a healthy weight) so for us its lots of chicken, salmon, turkey burger, and because he hunts , deer and elk burger. Once a week we'll have steak or pork. Try cooking up extra portions of your dinners and divide them into your own "lunchables." Homemade baked Beans, hard boiled eggs, brown rice, whole wheat crackers with pb or cream cheese, canned salmon or tuna, fresh fruit or sliced veggies, fruit salad , almonds etc.....

I do chili, sour cream and shredded cheese. I do sandwiches on whole grain, low fat deli meat, and, left overs....we do a lot of rotisserie chicken

Oscar meyer carving board turkey, Tomato slices, lettuce slice, low fat mayo, slice of thin toast...open faced sandwich, cut up in small bites. My current fav.

Chili...when I make it I measure one cup portions in freezer bags.

I've been doing some meat and cheese rolls with cucumber slices. I take 3oz of chicken or turkey deli meat, roll it with three slices of ultra thin sliced Swiss cheese. I spread a little bit, about 1/4-1/2 tbsp, of chipotle cream cheese on the ends to hold it together. It's 30g of Protein. I eat with some cucumber slices. It's delicious!

oooooo, some great new ideas for ME to try. I'm a teacher and now home for lunch for the summer. I was already getting bored with my own ideas. thanks for the shares.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
