On Friday I can start soft cooked veggies. What do you all recommend? I never thought I'd be do happy to eat a vegetable!

Yum yum!

Microwave some sliced zucchini, top with a little parmesan cheese

Cauliflower mashed with a little milk and butter is a great mashed potato substitute, as are rutabagas and celeriac.

Roasted carrots, toss in a bit of olive oil and sea salt and roast at 400 degrees for 20 min or until soft and caramelized.

Broccoli steamed or microwaved and topped with a bit of butter and grated Mizrithra or Coteja cheese.< /p>

Ok so I have questions.... The questions are going to show what an idiot I am when it comes to cooking... I normally open a can of corn or peas and microwave them. Please help!

1. Just microwave raw zucchini?

2. How do I mash cauliflower? Do I boil it in Water first?

3. Roast? Do you just mean bake in the oven?

4. How do I steam broccoli?

Surgery date April? I would beware. We were 3 months post op before starting vegetables, so please make sure that it is soft like the zucchini. I would not be trying carrots or broccoli unless it was cooked to death. Try a little bit of sweet potato. My first taste of veggies was a little can of LeSuer peas. Delicious and small, with a little spray margarine for taste. Chewed very slowly. You can slice zucchini into a small teflon skillet with a little spray of margarine until soft. Microwave a little cauliflower in about 3 Tbsp. Water until soft. The spray margarine is great. We waited 4 months before salad, now eating lots of salad and loving it. Canned green Beans you can eat slowly and chew very well. A zillion chews lol. At five months post op my favorite vegetable is fresh green Beans, tossed in a little olive oil , sea salt and pepper, and baked about 400 degrees for about 25 minutes. So delicious! But you cannot eat very much at one sitting.

My week 3 says "well-cooked soft vegetables". I'm just excited to eat something soon that I can't drink, even if it's only 2-3 bites!

Still be cautious. At 5 weeks out I cooked crockpot soft chicken breast in a FF mushroom sauce. I choked on it and thought I was dying of a heart attack. That is why the warning about carrots or broccoli. My husband chews so slowly I cannot figure out how he does it. I am not so fortunate.
