Great cookbook reference

"Diabetes Cooking for Everyone: 250 All-natural, low-glycemic recipes to nourish and rejuvenate" by Carol Gelles

While I'm not diabetic, I find the recipes in this book are very good & easy. I used it before considering bypass, trying to eat more healthy -- and now re-visiting it I realize it contains:

Chart Comparisons of Nutrient values for 8 Different commercial broths (pre-op) and another for different Proteins (helpful post-op) and an entire section of hot and cold Soups, many of them puree's.

Every recipe gives Diabetic exchanges (if you need that) and a suggestion for reducing the fat, Protein or sodium level depending on your needs.

The Index in the back gives you Calories, fat, Protein & carbohydrate for every single recipe by individual serving.

This is great if - like me, you're trying to serve your family some meals that you can eat together. For a long time the 'Green Beans a la Grecque' was our goto recipe -- even my kids loved them. One day my tummy'll get back to that recipe, but till then I'm having a great time exploring the rest of the book.

Highly recommended...Check Half Price books (where I bought mine for $7)

Oh yeah...the dessert section requires NO artificial sweeteners (yuck!)
