Cauliflower recipe question

I ladies and gents, I've been trying to use more mashed cauliflower and wanted to make like a fritter or a pancake or ? Out of it and everything online says to use panko bread crumbs but I wanted to make it a low carb. I tried using coconut flour but that was a disaster lol. Anyone have an idea of what I could use or a good recipe for mashed cauliflower?

I recently made cauliflower squares and didn't use any breading. I took a small head of cauliflower, make small "slices", stalks and all. (It gets kinda crumbly on the edges but you will still have a lot.) Cooked them till they were just getting tender. Drained them, drain them really really well. ( that's important). Then I added 2 large eggs, pepper, some Lawry's Garlic Salt, and 1/2 cup of fat free shredded cheese. Mix it all together then spread the mixture in the bottom of a greased cookie sheet pan. Bake at 350 until cheese melts and eggs look thouroghly cooked. Let cool, then cut into 20 nice size squares. The recipe came out to 18 calories per square. I entered my recipe in My Fitness Pal and it broke down to 18 cal, 1 carb, 1fat, 2protein per square. You can dip in pizza sauce or be creative. I put fat free cottage cheese on mine and ate for Breakfast & Snacks for a week! LOL

parmesan or a bit of cornstarch I know there are carbs in the cornstarch, but it crisps up really nice, think tempura batter, and takes on whatever flavor you mix it with.

you can blend one pound of cauliflower in the blender; cook until tender...drain all liquid (u can use a clean kitchen towel); add 2 scrambled eggs...mix well...lay out on a parchment paper on a cookie sheet and cook for about 40 minutes at 400...this makes your pizza base...they add your ingredients and bake off until melted :) (by the way, since it's not "dough" it won't rise, so whatever you make it, that's how it will turn out-size wise)...even my husband liked it

Cauliflower Breadsticks! Hardly any calories for the whole pan!

Ingredients:
large head of cauliflower
2 cloves garlic, grated or minced
2 large eggs, lightly beaten
4 oz low fat mozzarella cheese
1/2 teaspoon onion powder
salt
pepper

Directions:
Preheat oven to 450 degrees.
Chop the cauliflower into chunks and place into microwave for about 5 minutes or until soft
Place the cauliflower into a food processor and blend until it's a mashed potato texture
In a medium bowl, stir together cauliflower, eggs, cheese, and seasonings
Lightly spray a baking pan with spray oil and coat with the mixture (about 1/2 inch thick)
Bake at 450 degrees for 20-25 minutes or until the top starts to brown
Add additional cheese to the top and enjoy!

amazing what we can do with vegetables to fill the "void"...like spaghetti squash, cauliflower, etc

2 eggs... 4 oz of cheese. That's calories. Lots. And mine looked nothing like that! I soooo wanted it to. Anybody tinker?

4 oz low fat mozzarella is about 320 calories

2 eggs is about 140 calories

So around 460 total.

But I imagine a serving would only be 1/4 of the recipe at most (I certainly would be hard pressed to eat even that much at 4.5 months out) so that's about 115 calories 6 Protein and minimal simple carbs. I can handle that.

It's on my to try list, so I haven't tinkered. I'm sorry yours didn't look like the picture. How did it TASTE???

It didn't taste good either on accounta the texture. It was a mass of mush. Lol. I am no cook. I've given up on cauliflower as a "crust". I use sami's flax and millet Lavash for crust now. It tastes great, high Fiber, high Protein, low carb and works like a flat bread. I like to roast my cauliflower with curry or whip it with herbs and spices.
