tra0322 20 Posted February 17, 2014 I love anything buffalo flavored. Since buffalo wings aren't exactly the healthiest, especially once you've had WLS, I searched for healthy recipes where I could still satisfy my love of buffalo sauce. I got fresh cauliflower and cut it into florets and tossed it in a small amount of extra virgin olive oil and a little bit of salt and pepper. I spread the florets evenly on a baking sheet and baked for 25-30 minutes on 400°. After I removed them from the oven I tossed in buffalo sauce and they were ready to go! Very delish. Obviously not high in Protein but it's low cal and a healthier alternative to wings. Can be served with ranch/blue cheese but I opted against it. 4 lwilliams65, Jeanne14, BigGirlPanties and 1 other reacted to this

piercedqt78 658 Posted May 19, 2014 We do buffalo chicken wings about once a week in my house. I just bake the chicken in a small amount of buffalo sauce, and then the last 10 minutes I pour more sauce over them. I have also made chicken legs, and boneless skinless breast tenders this way. I make ranch dressing with plain greek yogurt instead of mayo and it's just as good. I have celery on the table for the family, but I can't eat it so I have about 1/4 of a cucumber to help cool off my mouth.
BigGirlPanties 957 Posted June 17, 2014 I bought some buffalo tofu at Whole Foods the other day... never attempted to do tofu, but they let you have a sample first (deli section) and it was surprisingly good...bought some to mix up with some green Beans ... I also got Mock chicken salad...am going to try to make it on my own (with tofu) and then share...it was YUMMY
SnohoGal98296 371 Posted June 17, 2014 My husband has been doing wings on the smoker, low heat smoke and then finishes with a high heat blast to get them really crispy, they are better than fried if you ask me! We are (maybe I should say "was" for me) wing snobs, so no breading and very little butter in the sauce (not 50/50 like most recipes, maybe 1 tbls to 1/2 cup sauce that is tossed on ~18 wings). They are always a huge hit at parties. I love yogurt mayo swap mentioned above, do you seed your cucumber coolers?
