mamatortuga 4 Posted February 5, 2014 So I am on the soft food portion of the show. I am wanting to make some meatballs out of ground chicken. (Always trying new recipes so no one at the house gets bored!). All of the recipes I can find call for bread crumbs to hold it togther! Anyone have any ideas as to whether this is ok or is there an alternative???
magtart 603 Posted February 5, 2014 I have had meatballs with no ill effects from the bread crumbs. I even ate chicken parmesan coated in bread crumbs.
Bufflehead 6,358 Posted February 5, 2014 I don't use bread crumbs because of the carbs and calories. I've used almond flour and that worked well. I've heard good things about minced cauliflower and mushrooms as well as grated hard cheese such as parmesan or romano.
lammy1383837871 4 Posted February 5, 2014 Shredded cheddar cheese and egg makes a great binder. Look up Adkins Recipe for meatballs. Yummy!
lovely momma 28 Posted February 5, 2014 I use oatmeal sometimes
mamatortuga 4 Posted February 5, 2014 Thanks guys! I used to make sausage balls with some bisquick but that worries me too! Think I will stick to the egg and some cheese since the meatballs call for them!
BigGirlPanties 957 Posted February 5, 2014 panko is lower in carbs...but with an egg, you don't really need the crumbs... speaking of which, on Rachael yesterday they made a pizza dough with cauliflower and eggs!!! HELLO KITTY!!! YEAH!!! On my list of "try me's"
