gamergirl 4,610 Posted December 9, 2013 My husband made up a wonderful lunch for us today. Pictures and nutritional info, at Water 1/2 lb shrimp, cleaned, deveined 1/2 cup Cotija queso seco cheese, crumbled (can substitute feta) 1/8 cup chopped cilantro Lime juice Black pepper Method Heat oil in a pan. Add the onions and jalapeños, cook for 5 minutes on medium high until the onions begin to brown. Add the garlic and cook a minute more. Add the tomatillos, reduce heat to medium and cook for 10 minutes, until the tomatillos are cooked through, but still hold their shape. Sprinkle salt over the tomatillos as they are cooking. Add 1/8 cup of Water.< /li> Add the cheese and shrimp and cook until the shrimp cook through, about 10-15 minutes. Remove pan from the oven.
