Green Chile Pork Crockpot Stew

Pictures and nutritional info at: Protein, and easy. What more can you ask for?

Ingredients

  • 1/2 lb pork cut up for stewing (I’m trying to make smaller quantities, you could use a lb and double everything else below)
  • 2 small chopped roma tomatoes
  • 1 chopped jalapeno pepper OR Substitute 1 can of Rotel tomatoes for the fresh tomatoes and jalapeno)
  • 1/2 c frozen pearl onions OR 1/4 c chopped fresh onion
  • 1 small sweet potato cut into four large pieces
  • 1 can green chile, chopped
  • 1/4 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp chipotle pepper (ground)
  • 1 tsp salt

Method

  1. Place all ingredients into a crockpot and cook on high for 5 hours or on low for 8 hours.
  2. Alternatively, cook in pressure cooker for 10 minutes and let the steam release on it’s own for 15 minutes.

My mom made me cook one meal a day since I was 14 so I've been cooking for a long time. In India we don't use recipes so you have to learn to get a feel for food. So I make these up. It's fun :)

That's amazing what a great way to learn spices and foods. I too cooked a lot when I was young. My dad worked a lot and our mom passed when I was 2. So I cooked for my sister and dad. Not as often as one meal a day and I never adventured as much with food. :) You come up with some great stuff. Keep um coming I enjoy them :)

I was that way too. I enjoy food and cooking. I'm doing my best to adapt to the new sleeve.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
