Low-Carb Shepherd's Pie

Okay here's a paleo version of Shepherd's pie made with mashed cauliflower. Pictures & nutritional facts at: http://sleevers.wordpress.com/2013/11/09/paleo-low-carb-shepherds-pie/

My older son has always loved shepherd’s pie. When he was little, he’d sit on the kitchen counter and watch me make it for him. So one day, when he was about 3, I asked him how Mummy made shepherd’s pie. He thought for a bit, and then said “First you catch a shepherd and then you kill him!” Boys. Such ghouls.

So I decided to try a paleo, low-carb version, which meant substituting mashed cauliflower for the potatoes. Technically this is a cottage pie, since I used ground beef. Makes 2 meals for 2 sleevers.

Ingredients

For the Topping:

  • 8 oz bag of cauliflower florets, either fresh or frozen
  • 1 tsp coconut oil/ghee
  • salt and pepper to taste

For the Pie:

  • 1/2 lb ground beef
  • 1/8 c chopped onion
  • 3 cloves garlic, peeled and crushed
  • 1 tsp coconut oil/ghee
  • 2 tsp Worcestershire sauce
  • 4 oz Tomato sauce (can substitute 1 tbsp tomato paste)
  • Salt & Pepper to taste
  • 1 egg beaten
  • Paprika

Method

  1. Steam cauliflower in it’s bag for 5 mins in the microwave
  2. When done, put into bowl of food processor. Include all the Water it generated as well.
  3. Add coconut oil, salt, and pepper and process until smooth and light.
  4. Meanwhile, heat the coconut oil in a pan until hot. Add onions and garlic. Prepare to inhale wonderful aromas and for your spouse, kid, and dog to walk in wondering what smells so good.
  5. Brown ground beef.
  6. Add Worcestershire sauce, salt, pepper, & tomato sauce.
  7. Remove from heat and let it cool for 10 minutes.
  8. Beat the egg and mix into the meat mixture
  9. Spread in a pie plate or an 8-inch square pan that has been lightly sprayed.
  10. Spread meat in an even mixture.
  11. With a light hand, spread the pureed cauliflower. Rake gently with a tine to create peaks and valleys so it looks pretty when browned.
  12. Sprinkle with paprika
  13. Bake in 350 degree oven for 20 minutes.

This looks great, Gamergirl! I used to love Shepherd's Pie. I've never had it with cauliflower instead of potatoes.
