I've always had a hard time eating a nutritional Breakfast. Mostly because I never get up in time to make something before heading to work. The idea of using a muffin pan to make scrambled egg "muffins" seemed like something I could accomplish on the weekend and have ready for the week without too much hassle. There's all sorts of stuff that looks good on there. Just thought I'd share.
