Pizza?!? Yes you can!

My family loves homemade pizza!! But the carbs are of course not good for us fellow bypassers, so I tried the cauliflower pizza crust. I must say it was amazing!!! It's filling, flavorful, low carb and low calorie!! It was a winner!!! I put a little sauce, some low sodium ham, beef, onions, bell peppers, and low fat cheese! I didn't even miss the crust!! As a matter of fact, we went to a local pizza place tonight for a party and I ate 1 very small piece of cheese pizza thin crust...I have felt yucky ever since!! This cauliflower crust will be my new go too!! My kids and dad were just pulling it apart eating the crust with no topping!! If you haven't tried it and you miss pizza, please do! You won't be disappointed!! I just googled "cauliflower pizza crust" and tweaked it a bit to our taste likings. I've gotten off track a bit and gained 10 lbs because of it. So I have put my foot down and am working to make whatever substitutions I can! This was a delicious sub to the fatty, high carb pizza I used to be addicted too!! Just wanted to share and be an encouragement and say that we CAN all do this and if we mess up, make a mistake, or slip back into those old habits...tomorrow is a new day and a fresh start!! Cauliflower pizza Crust

Ingredients--- 1 cup cooked, riced cauliflower 1 cup shredded mozzarella cheese 1 egg, beaten 1 teaspoon dried oregano ½ teaspoon crushed garlic ½ teaspoon garlic salt olive oil (optional) pizza sauce, shredded cheese and choice of your toppings*

Instructions--- To "rice" the Cauliflower: Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like grain. Do not over-do pulse or you will puree it. (If you don't have a food processor, you can grate the whole head with a cheese grater). Place the riced cauliflower into a microwave safe bowl and microwave for 5 minutes. There is no need to add Water, as the natural moisture in the cauliflower is enough to cook itself. When cooled squeeze out Water. One large head should produce approximately 3 cups of riced cauliflower. The remainder can be used to make additional pizza crusts immediately, or can be stored in the refrigerator for up to one week.

To Make the Pizza Crust: Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray. In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano, crushed garlic and garlic salt, stir. Transfer to the cookie sheet, and using your hands, pat out into a 9" round. Optional: Brush olive oil over top of mixture to help with browning.

Bake at 450 degrees for 15 minutes. Remove from oven. To the crust, add sauce, toppings and cheese. Place back on oven til cheese is melted and enjoy!!

****you will need to make sure your toppings are pre cooked!!

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
