chicken stuffed with spinach and mushroons

Just figured out how to make this..

4 chicken breasts

small package frozen spinach

crimini mushrooms. About. 1/2 ll

2 cloves garlic

Salt and pepper 1 shallot

1 c. Ricotta

Z1/4 c parmesan

1/4 t. Nutmeg

Pound chicken breasts very thin

defrost spinach...wring out all moisture

Saute shallots garlic and mushrooms with salt and pepper until soft grind in food processor

combine with ricotta and parmesan, spinach and nutmeg

Place a mound of stuffing in each breast. Roll up and secure with toothpicks

Brown chicken in hot pan with a little olive oil....brown well on all sides, cook 10 to 12 minutes

can be served with basic white wine sauce....this is dinner tomorrow!

I'm serving with roasted cherry tomotoes and chicken stock quinoa . Let you know how it is!

Please..just come to my house!! Anytime u wanna see FL I got u a place..lol..I wish I had some amazing meals like u make when I get home from work. My husbands not a cook and non weight bearing and I'm pooped! I'm lucky to get a piece of cheese at times lol

Shrimp tacos

1 pound peeled and deveined shrimp juice of one lime

1 tablespoon chipotle powder

2 avocados

Cilantro onions lettuce and tomatoes for garnish

whole wheat tortillas

marinate shrimp in chipotle powder and a little lime juice

grilled shrimp just until pink do not overcook

serve with chopped avocado and all the other garnishes you wish enjoying whole wheat tortillas

I eat this without the tortillas and its just delicious.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
