Be careful with the potato. It's really a starch. Try cream of wheat the healthy one mixed with milk. chicken in the crock pot. Beef in the crock pot, very easy to shred. I froze shredded meats in muffin tins and them popped into freezer bags. I even cooked a large pot of chili in the crock pot and froze 25 muffin tins worth ( they pop right out like ice cubes) and I measured 1/4 of a cup o the chili and then wen you defrost add some cheese on top. Great Portion Control too.

I also purchased 4oz Rubbermaid containers and divided yogurt and cheese up, even scrambled eggs or the cream of wheat. All to keep my meal under the oz my NUT said. I am 3 months out and still measure this way. I have a small Pyrex custard cup I use at work and know that once I fill my food to the line it's 1/4 to 1/3 of a cup taking into consideration the space. I sometimes can't finish that but try hard to get the Protein in. I eat a lot of Beans and Lima Beans for Snacks plus peanuts or yogurt measured out.

Let me know I you need some recipes.

She had a lot of recipes and I have tried several.
