Meatballs!

I'm on the Quest for a good recipe for Italian meatballs. Looking for something light that I can squished with my fork....google and I have been playing but I'd rather have something that you've tried and loved. Any suggestions?

HW 312, pre-op (lap-band) 294, pre-op (RNY) 255, surgery date 2/11/13, goal weight 154, current weight 231.4

I use extra lean ground beef mixed with a package of roasted garlic onion Soup mix and they turn out awesome.

Do they come out soft enough to mush down to make it mushy or blendable ?

Every time I have made them they have come out great. You could add something like Greek yogurt if you are worried it will be too tough to digest.

You could do what my mom does which is half pork half beef - add an egg - she bakes them and they are ok

I make chicken meatballs. Day old bread soaked in milk. Squeeze the excess milk out. If u don't have this, u can use bread crumbs. Add it to the ground chicken with salt,pepper,egg, parsley, oregano, basil and grated parm. This is an optional step that I add: I sauté onions, garlic and peppers until soft, let cool and add to meat mixture. Form into balls and bake at 400 for 25-30 mins depending on how big u make them.

I went with google, beef + pork plus they had the bread soaked in milk plus ricotta, squished up very nicely!

and - while this sounds dirty - it is true - don’t handle your meat too much - you want to gently and lightly hold the balls - (OK OK stop giggling) it is true...

Lord knows I hate holding the other kind of balls - they make something else get all hard too.

Trader Joes has FABULOUS Tomato basil chicken meat balls. Bake for 15. I get their organic vodka sauce with it. Yum!! I wouldn't make any with bread. It just takes up space you need for Protein.< /p>

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
