shaunda 122 Posted March 18, 2013 1 head of cauliflower chopped into small pieces 1/2 cup nonfat plain Greek yogurt 1 can 99% fat free cream of chicken Soup 1 onion diced 1 cup reduced fat sharp cheddar Salt and pepper Microwave diced cauliflower for 4 minutes. Use paper towel to blot up any liquid. Add everything else except enough of the cheese to cover the top. Mix together well. Add remaining cheese. Bake at 375 for 30 min. You won't miss cheesy potatoes. It's so good. Thanks. I'm going to make it tommorrow. lmcgloon 127 Posted March 19, 2013 Made Bacon Cheeseburger Lettuce Wraps 1lb ground turkey 5 pieces of bacon; chopped to bite size pieces 1/2 medium onion (or 1 small) 5 wedges Laughing Cow Queso Chipotle cheese Spread 1/2 Cup shredded cheddar cheese 1 Tbsp ketchup 1 Tbsp Mustard 1 Tbsp Dill Relish 1 Head of Lettuce ( I used iceberg but most any kind would do) Saute onions and bacon together until bacon is almost crisp and onions are soft. Add ground turkey until brown. Mix in cheese wedges until melted. Add in ketchup, mustard and relish. Scoop onto a lettuce leaf. Top with shredded cheddar. Simple 1-dish meal You can also mix it up to make it how you like. Oh and depending on the size of your lettuce wrap, this makes enough for the family.
