Mini Protein Pancakes shared by Unicornbeauty

Course: Breakfast

Amount Per Serving

Calories: 53Fat: 2Carbohydrate: 4Fiber: 1Protein: 5

Yields 40 pancakes originally 40 pancakes

Serves 8 originally 8 servings

Ingredients

1 cup oats

2 eggs

1/2 cup 2% fat cottage cheese

2 packets sweetner

1 teaspoon cinnamon

1/4 cup 2% milk

cooking spray

Directions

Add all ingredients in bowl and mix

If you want really smooth pancakes use blender or hand blender to blend ingredients

Heat pan over medium heat

Use a tablespoon to spoon out even amounts of batter on pan

Once you start seeing little bubbles on the edge of pancake flip

Cook for about 1 minute on other side

Serve with fruit, low calorie Syrup, low calorie whip cream, Peanut Butter or any other favorite topping you may have.

Pretty much the same thing. Gonna try them maybe for dinner. Not a ton of protein but I figure I can maybe smear a few with peanut butter or something

Anyone have a good chicken chili recipe? I've been craving it.

I make mine with white Beans and cut up chicken breast. I use fresh beans not canned but you can do either. Canned won't need to cook as long.

I cut up a half of each- red, orange and green bell pepper and onion and 2 celery stalks. Saute the veggies in tbsp of olive oil. Add chili powder, basil, garlic powder and lemon pepper to your liking then add your chicken breast (2-3) cook chicken. Add a can of diced tomatoes with chillies. And 3 cups of low sodium chicken broth. Add your beans, bring to boil then cook on a low heat for about 2 1/2 hours. If you use canned beans it should take about an hour. It works in a crock pot too. I cook for 6 so you can modify it to fit your family.

Ooh I had a pancake craving today too! We went to a local diner and I got Greek yogurt, granola and fruit and my sweetie got eggs and a pancake. I had my 2 bites and was perfectly happy! I savored it! I LOVE my new life!

I'm roasting up a chicken in the oven... Going to have that with some taters and roasted veggies! Plan on making chicken and roasted veggie Soup for later in the week!

Unfortunately I'm not a big cottage cheese fan. It's a texture issue. I think I'm going to try the Protein pancakes this week sometime. I gotta go to the store and pick up the ingredients.

Is ricotta similar to cottage cheese? It's smoother... I bet it would be good w/fruit of your choice.

I had cottage cheese w/strawberry tonite. Tomorrow I think I'll try the cauliflower Pizza Crust w/diced tomatoes, feta cheese and turkey pepperoni.

Egg salad on a few saltines. I wanted to eat the whole thing it was so good, but my pouch put the kibosh on that.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
