Candy V 5 Posted January 26, 2014 My basic recipe is one cup cooked, chopped, and well-drained cauliflower mixed with one cup low fat cheddar cheese and one egg, salt, pepper, garlic powder and oregano. Spread really thinly on a sprayed sheet tray and bake at 400 for 20-25 minutes. Let cool. Cut into crackers and crisp under broiler or in toaster oven. So much healthier than tortillas. I whipped up a batch this afternoon - it's Hubby's favorite. :-) And what's up with this crazy weather? Single digits all last week, 42 yesterday, teens today, supposed to be forties tomorrow, then back to frigid weather for the rest of the week! :-p. We had 5 inches of snow yesterday and right now it is -12 with a wind chill of -28! Freezes the nostrils in a second! They closed a ton of area schools already yesterday for today AND tomorrow! I'm seven months out and I'm just now able to tolerate it. In fact with any kind of meat with the exception of fish and shrimp (I can always eat) it's hit and miss.
