I made so much chicken that I added shredded cheese to it, rolled them up in low carb tortillas (kinda like taquitos) and froze them. Can be cooked tons of ways, but for low fat and calorie, cook some onions and pumpkin, roast em first gives them a great flavour, add some veggie stock or chicken stock, to your liking, add a bit of nutmeg, just a smudge,, cook till soft and purée all together. You can add a can of light evaporated milk for creaminess, without the fat, and even coconut flavoured evaporated milk for extra flavour. You could add some curry powder if you like, but it's not necessary. When it's puréed down it is thick and creamy, if you don't want to add the evaporated milk, just add Protein Powder.
