Gonna try porcupine meatballs been craving them

I have not made porcupine meatballs in years! I had totally forgotten about them...

Definitely!

1 can far free cream of celery

2 bricks low fat cream cheese

2 bags pepperoni (chopped up)

Throw it all in the crock pot and stir every so often for about 2-3 hours. Keep it on high for the first hour then turn it to low for the remainder of the time. The dip will be orange (from the pepperoni fat) when it's done. I just ate it with a spoon but everyone else used tortilla chips. Yum!

This sounds so yum!!! Gotta love football season!

Ingredients 1 pound lean ground beef 1/2 cup uncooked white rice 1/2 cup Water 1/2 cup chopped onion 1 teaspoon salt 1/2 teaspoon celery salt 1/8 teaspoon garlic powder 1/8 teaspoon ground black pepper 1 (15 ounce) can Tomato sauce 1 cup water

Directions

In a large bowl, combine the ground beef, rice, 1/2 cup of water and onion. Blend in salt, celery salt, garlic powder and pepper. Mix well. Shape into 1 1/2 inch balls.

Preheat oven to 350 degrees F (175 degrees C). In a large skillet over medium heat, brown the meatballs; drain fat.

In an 11x7 inch baking dish, combine the tomato sauce and 1 cup of water. Place the browned meatballs into the tomato sauce, turning to coat well.

Cover and bake in a preheated oven for 45 minutes. Uncover, and cook for an additional 15 minutes.

I wanted to see if my stomach was ok with because wanting to make stuffed cabbage

What the heck is a porcupine meatball? Im southern and we eat some weird things but porcupine??

Its kinda like the filling of a stuffed pepper rolled into a ball. And it ground beef or turkey not porcupine! ;)

The ones I used to make for my kids when they were young were turkey meatballs with rice mixed in. The rice cooks, swells, and sticks out of the meatballs 'porcupine-like'. My kids loved it. My son would eat anything that looked weird - it's a little boy thing. :-)

Can you use brown rice instead of white Gummy rice in the meatballs?

Cool, i would like to make them as healthy as possible. I try not to eat much rice. But this is something my husband would eat

I'm making meatballs with Mashed potatoes. Substituting ground beef for ground Turkey. Throwing in a scoop of unflavored Protein Powder in the meat as I season it. And a scoop in the potatoes as I mash them. With Greek yogurt to sub the sour cream

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
