Buffalo chicken on salad greens with shredded cheese, grape tomatoes and ranch dressing.

You need:

6 cup(s) lightly steamed cauliflower' date=' florets, fresh (about 1 head)

1 Tbsp olive oil

1/2 tsp Kosher salt

1/2 tsp black pepper, freshly ground

1/4 cup(s) grated Parmesan cheese, Parmigiano-Reggiano if wanted, which I recommend. You can find them in light/fat free version.

I used Mozzarella because that's all I had in my fridge.

Preheat oven to 450ºF.

In a large bowl, combine cauliflower, oil, salt and pepper; toss to combine. Transfer cauliflower to a large baking sheet and spread into a single layer. Roast until cauliflower is golden brown, tossing occasionally, about 15 minutes. Remove from oven, place in serving bowl and sprinkle with cheese; toss to mix. Yields about 3/4 cup per serving.

I am so glad it sat well. I am always über excited when I can try an old recipe and it sits well.

I cooked my beloved chicken cabbage rolls a few days ago and I am still licking my whiskers. Amazing what the pouch likes and is content with.

Went to Logan's earlier today and had grilled shrimp with a side of baby roach. Stupid restaurant did not spray for bugs in a while, according to the manager. Shameful. That shrimp went right back in their nasty kitchen and got it scratched off the bill.

Yuck!!! I wonder how many baby roaches ended up eaten in that place!!!

My husband works I pizza hut so I had him make me a thin crust taco pizza...lots of Protein as he packed on the refried Beans a.d beef for me...could only eat a very small slice but was so good and a nice change!!

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
