KaylaMichelle 0 Posted December 28, 2012 My omelet recipe involves mushrooms, a little onion, sweet peppers (if they don't bother you) and sometimes I even throw some chicken in there. I get the fully cooked roasted chickens from the grocery store and pull apart some bits to throw in. Adds Protein & can make it more of a dinner meal than a breakfast one Simmer the veggies and chicken in a skillet first so they are nice & soft (You can use a little olive oil if you like, but I just go with it dry so it doesn't get greasy.) Then set that aside and fry up the egg to desired done-ness, add chicken and veggies, flip, and voila! I'm just 6 days post-op, so still on liquids.
