Pumpkin Caramel Bake Soft foods, high protein

I LOVE PUMPKIN!!!

I got some purée and put it on my Greek yogurt with pumpkin pie spice, vanilla extract and stevia yummy!

Oh and I saw this ..

omg that looks so good! And we just got a little ice cream maker thingy so I will un-virginate that thing with this recipe! Thanks for sharing.

Mine is in the oven now... I doubled the recipe and used 1/3 c measuring cups in cupcake pans... I got a dozen.. I am not sure how long they are going to bake.. I put them in for 15 minutes and then I'll check them... I can't wait!

SOOOOO.....how long did you bake them for in the muffin pan??

Just signed up to follow. What is in pumpkin spice. Can't get it here so I would have to make it. Nutmeg and cinnamon?

Is this a main or a dessert?

Pumpkin pie spice:

2 Tbsp ground cinnamon

1 Tbsp ground ginger

2 tsp ground nutmeg

½ tsp allspice

½ tsp ground cloves

Mix together. I'd say it's more snack/dessert because it is a bit sweet but ever so lightly so.

I baked mine for 25-30 minutes. You just have to check them by sticking a toothpick in the center.. If it comes out clean, they are done!

Thanks for the spice recipe. I will have to make my own pumpkin purée, which is not a big issue. Can't get Torani here so will look for an alternative or just use vanilla essence.

Honestly I am not sure how much the pumpkin Syrup added to it. Add some kind of fake sweetener and go a little heavy on pumpkin spice and vanilla essence and it should be as good.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
