Pumpkin Caramel Bake Soft foods, high protein

Sorry I feel like I'm bombarding the food board today but catching up with the stuff I neglected to post this week. Okay let's be honest, this isn't desert, but it's as close as I'm going to come to it right now, so I decided to enjoy it.

Fall weather is here in Texas and it’s time to make something with pumpkin that’s still sleeve friendly. I adapted this from eggface’s pumpkin ricotta bake. It would actually make a nice Breakfast dish as well.

Ingredients

2 eggs beaten

1 c ricotta cheese

1/2 c pumpkin puree

1 tsp pumpkin pie spice

1/2 c sugar-free Caramel Syrup (I used Torani)

1 packet Stevia (optional)

Toppings

Handful of dried craisins

Handful of slivered almonds

Method

1. Mix together all ingredients. Pour into greased pan.

2. Sprinkle toppings .

3. Bake at 350 degrees for an hour or until knife inserted into the center comes out clean. Really, does it get simpler than this?

4. Let it cool or eat warm with whipped cream.

Is the ricotta cheese necessary? I'm lactose intolerant and can't have it. Wonder what I could use as a substitute?

I am not a fan of all things pumpkin, but that sounds good to me. Must be the caramel. I am a big fan of anything with caramel.

Hmmm.... I don't know. If I were you, I'd try a small serving without it. I think the pumpkin and egg should bind just fine together. Ideally you'd put in a little milk or something to make a custard but there's the lactose again.

Do lactaid pills not work for you? They work great for me and allow me to introduce some variety into what I'm eating.

Lactaid pills do not work for me, but I do use lactaid milk and I'll try it with a little if that!

I've been told they make a lactaid cottage cheese... If you find it you can substitute that for the ricotta... Just put it in the blender first! ????

        Fairlife Core are by far the best. They taste just as they are - chocolate milk. You can either get the 26 grams or the 42 grams (harder to find and more expensive). For straight protein look at Bulksuppliments.com ..they have really good whey proteins and offer auto ship plus they test for purity. No taste or smell...
