I find it's much easier to eat healthier in the summer when the weather is hot and sunny and you crave fresh, crunchy, cool produce, salads, fruit, etc. Today it's 55 degrees F outside, pouring down rain and blowing and my body is starting to crave casseroles, caramel, pumpkin bread and all types of baked goods. I'm combing Pintrest for healthy recipes, but mixed up in there is a whirling vortex of gooey delicious no no's. Any ideas for healthy recipes to stop fall food cravings?

The other things that I think would work for fall is stews and Soups. I have a tough time with the liquids with it, since they tend to make otherwise-hearty meat a slider for me. What I've learned to do is make my old stews and Soups, take out the meat and shred it, and then top it with a little of the sauce and mix it well to moisten it. Did that with the fish curry today.

All of the flavor, none of the guilt.

Until it's time to throw away all the excess liquid, and then I feel guilty for wasting food!

I know what you mean though. When the weather turns, I get all snuggly and want to eat comfort foods... It's like I'm a damn bear and I'm getting ready for hibernation! :D

Ricotta bake is awesome...I eat it 3x a week.

I'm going to try it tonight. the recipe i linked to was a pumpkin praline ricotta bake that I thought sounded more "fall like". I"ll try that one too this weekend I hope.

Anything italian-ish without the bread/pasta... The ricotta bake suggested above is fantastic.

I've been sauteeing a half an onion with some garlic, then adding some peeled chopped zucchini and adding a can of small diced tomatoes with some oregano and basil..Let it simmer together for a bit, Then add a bag of fresh baby spinach and wilt it down and cook until the spinach is done. Add a drizzle of olive oil. To serve, Toss the portion you are going to consume immediately with some feta cheese and top with a cheese of your choice. Microwave until your cheeze is melty and bubbly.. Tastes like a greek pizza! And it still has a nice "fresh" taste but it's HOT! It's NOT a high Protein meal, but I've still been hitting 70-90 grams even with including this deliciousness for one of my meals.

I'm going to make a pumpkin spice Protein latte to start my day tomorrow. Blend:

6 oz espresso (I just add 6 oz boiling Water to 2 tsp. instant espresso)

2 oz skim milk/vanilla unsweetened almond milk/soy milk/whatever "milk" you like

1 pump sugar free pumpkin pie Syrup

1/4 tsp. pumpkin pie spice

make sure the temperature is under 140 degrees

blend in 1 scoop vanilla Protein Powder

Stats: 109 calories, 5 carbs, 23 g Protein, 23% RDA Calcium (made with Hood Calorie Countdown nonfat milk and unjury vanilla protein powder).

This makes me feel better about standing in line next to Trader Joe's pumpkin toaster pastries and not buying them the other day . . . I love anything pumpkin and really crave it in the fall.

I luv it that pumpkin season is in full force. Luv pumpkin anything. And its healthy (if u make it right, of course).

Hate, hate, hate summer. Can't stand the heat. U can always put a sweater on but u can't normally get naked to cool off

This couldn't have come at a better time! I just sent my husband to the grocery store and asked him to get SF pumpkin syrup. I asked if we wanted pumpkin lattes from Sbux and he said, why don't we mak them at home?

Any recipes with healthy squash of any sort is my comfort food for fall. I love spaghetti squash, butternut, acorn, yellow, pumpkin, etc. Especially with brown sugar, cinnamon or maple Syrup. And since I can only eat 2 oz's at a time, it's perfect. Eat it right out of the oven, or make a casserole or Soups, etc. This is my most fav time of the year. Squash is also very healthy and packed with Fiber, Vitamins and good stuff in general.

I'm obsessed with my crock pot.. So I have a bunch of crock pot recipes

Creamy salsa chicken:

4 chicken breasts

2 cans fat free cream of chicken

1 jar salsa

2 tablespoons taco seasoning

Cook on low all day or high for 4ish hours. Shred and let sit for a half hour longer. You could also add a drained can of Beans if you want to up Protein

Pulled BBQ chicken:

4 chicken breasts

1 bottle sugar free BBQ Sauce

1 can diet dr. Pepper/diet root beer

Cook chicken in soda in low all day (6ish hours). Drain liquids and shred chicken. Add BBQ sauce.

CREAMY CHICKEN:

4 chicken breasts

2 cans fat free cream of chicken

1 packet of Italian dressing mix

Mix dressing packet with 3/4 cup of Water and pour over chicken. Cook for 2 hours, then add cream of chicken Soup. Cook an additional few hours. I usually add string Beans and onions too.

BUFFALO CHICKEN:

4 chicken breasts

1 ranch dressing packet

Butter (i used margarine)

1 cup franks hot sauce

Cook on low all day and shred before serving

ITALIAN CHICKEN:

4 chicken breasts

1 chopped onion

1 chopped green pepper

1/2 bottle of light Italian dressing (the oily, not the creamy)

Cook on low all day

BEEF STEW:

1 lb of stew meat

Whatever veggies you want (I use carrots, green beans, peas)

Potatoes (optional. I make them for my hubby and kids)

1 packet brown gravy mix (low sodium)

1 packet onion Soup mix

1 packet Italian dressing mix

Put in enough Water to just cover meat and add all packets. Cook all day

GRILLED CHICKEN PARM:

Season chicken cutlet with salt/pepper/garlic powder/Italian seasoning

Pan cook until almost cooked all the way through.

Put in baking dish and cover with sauce, mozzarella, and Parmesan cheese

Bake until cheese is bubbly

The. I broil a few min because I like that brownish cheese

        Fairlife Core are by far the best. They taste just as they are - chocolate milk. You can either get the 26 grams or the 42 grams (harder to find and more expensive).
