We went to Watsonville (home of Martinellis Sparkling Cider and juice) and bought Newton Pippins.i wanted apple crisp with ice cream, but made this heathy substitute instead. Peel, core, and slice two small apples. In a fry pan with lid, Stir together 1 Tbsp. sugar free apricot jelly, 1/4 cup Splenda, and 1/2 cup Water. Add the apple slices and a dash of cinnamon and heat to boiling. Cover and simmer it for about 5 minutes or apples are soft, then uncover and cook down the sauce. Mix 1 cup Greek yogurt with Splenda to taste. Optionally add 1 tsp honey for flavor. Put 1/2 cup Special K Cereal in a Baggie and crush to coarse crumbs. ribearty 544 Posted September 25, 2013 Linda, Thank you very much. This sounds delicious. I will definitely try this recipe. Might even try it prior to surgery. My surgery date will be in October but not sure when. My doctor's office does not schedule surgery without the written letter. It will be either 10/8 or 10/25 due to work schedule.
