Apple Yogurt Parfait

Apple season is here and the weather is a little cooler. We went to Watsonville (home of Martinellis Sparkling Cider and juice) and bought Newton Pippins.i wanted apple crisp with ice cream, but made this heathy substitute instead.

Peel, core, and slice two small apples.

In a fry pan with lid, Stir together 1 Tbsp. sugar free apricot jelly, 1/4 cup Splenda, and 1/2 cup Water.

Add the apple slices and a dash of cinnamon and heat to boiling.

Cover and simmer it for about 5 minutes or apples are soft, then uncover and cook down the sauce.

Mix 1 cup Greek yogurt with Splenda to taste. Optionally add 1 tsp honey for flavor.

Put 1/2 cup Special K Cereal in a Baggie and crush to coarse crumbs.

Divide yogurt into two bowls, top with apples and Cereal.< /p>

Yum!

Thank you very much. This sounds delicious. I will definitely try this recipe. Might even try it prior to surgery. My surgery date will be in October but not sure when. My doctor's office does not schedule surgery without the written letter. It will be either 10/8 or 10/25 due to work schedule.

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

        Me too girl!! Are you in the full liquid diet right now? It’s sooooo hard!

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
