BBQ Chicken Pizza-(no bread)-but tasty

Mix one can of drained canned chicken breast (98% fat free), 2 1/2 tablespoons carb watcher, low cal BBQ Sauce, and sprinkle with lowfat/fat free mozzerella cheese. sprinkle with finely chopped cilantro and microwave. This makes about 3 meals worth depending on how much you're allowed to eat. it's good and tasty and virtually fat free. I came across it 3 weeks post surgery while bored with my bland chicken breast! I used canned chicken and made chicken salad during the mushy stage. I still eat it now, too, for lunch. My doc's assistant told me that anything that I can get to a "cottage cheese type" texture I could eat during the mushy stage. So, I chopped up shrimp, tuna, etc. and mixed with lite mayo/miracle whip (whatever you like) to make it that way.

Hi There !

I want to share a great receipe.

It is not my own I was scanninig another thread in hopes of finding some Ideas for something with flavor. Bingo whoever this person is I want thank her so much.

Here it is you get Turkey Pepperoni I got Hormel(17 little slices only 80 cal. and 10 gms of Protien)Anyway put the slices on a paper plate and cover it with a paper towel and cook them on HI in the microwave for 2min. It makes them like tasty little chips. Then here is my addition I take cottage cheese and mix Salsa w/it and Viola ! Chips and dip :-) Very Hi in flavor,very Hi in Protien and very low in Calories. I had it for dinner tonight.

I am sure there is a lot of things you can do with those pepperoni slices w/o making chips out of them.

Just thought I would share !

I take the canned chicken and add some lowfat ranch dressing and mix well. I have this on crackers. Or I mix some very finely chopped celery, light mayo, and a very small amount of bread crumbs (for texture). It's better if you let it sit in the fridge for an hour or so. ~Mandy
