Ricotta Recipes?

I've never actually cooked with ricotta before, but I bought some today since it seems to be the cheese of choice LOL

Does anyone have any good recipes they've used it for?

I don't know any cooking recipes, but years ago I did the south beach diet and you can make very tasty Snacks with ricotta. Just added some Splenda and cocoa powder or any flavor extract you like. Put a small dollop of cool whip and its super tasty!

Search ricotta bake and a really yummy recipe week pop up. I LIVED off that during the puree stage and still make it weekly. I modified the recipe for Portion Control and used muffin tins..sooo convenient. I also add shredded zucchini sometimes and/or chopped up turkey pepperoni pieces. I use 1/2 the amount of parm cheese that the recipe calls for and it still tastes amazing. Good luck!
