Reigo 111 Posted June 11, 2013 So I haven't made this yet (start mashies Wednesday) but I love to cook and create different food combinations. As I watched my 4 year old eat hummus, I came up with this recipe idea to make a Greek twist on a pizza. Take either whole wheat pita rounds (you probably could split a pita and use each half to make a thinner crust) or even a low carb tortilla. Spread your favorite hummus on the "crust" however liberal you want (probably 2-3 tablespoons would do the trick). Then sprinkle with a light mozzarella or provolone cheese and add some of your favorite toppings like roasted red peppers (dry off well), Greek olives, peporiccini peppers or artichokes! Toast in oven until cheese melted and crust is crisp. Could garnish with toasted pine nuts! I will try it once I am on solids but thought I would share... 1 T. tigerbelle 328 Posted June 11, 2013 it sounds good...but my nutritionist doesn't allow any starches (bread, crackers, potatoes, rice, etc) until at least 6 months out...therefore, if I follow my plan, I could not eat the pita rounds or the tortilla...now I have been eating hummus with chicken (chewed very well) for a couple of weeks now and love it 1 Reigo reacted to this Share this post Link to post Share on other sites
