Curry Avacado and Egg Salad

Found this on Pinterest and it's so good!

1 Avocado

4 Hard Boiled eggs

2 Tbs light mayo

1tsp curry powder

Pinch of salt and pepper

Chop up egged and avocado and mix in remaining ingredients and your done! I'm eating this while kn puréed/ soft foods.

Hmm...I don't like curry...but I bet it would be good without it! Thanks for posting...never thought of avocado & eggs!

Does the avocado turn brown if you store this in the fridge?

I actually made this a couple of days ago and it's not brown yet but my avocado was not extremely ripe
