Lime, Shrimp and Avocado Salad

Here is a yummy dinner we enjoyed tonight. Very fresh and no need for oven during summer time.

1 lb cooked jumbo shrimp (detailed and chopped)

1.5 medium avocado diced

2 med Tomato seeded and chopped

1/4 cup red onion diced

1/4 cup cilantro chopped

juice of 2 Limes (mix 1 tbsp olive oil)

1/2 piblamo pepper diced

Salt and pepper to taste

Combine all ingredients and serve.

5 servings

Each serving has

Calories: 220

Fat: 11 g

Carb: 9 carb (4.2 gram fiber)

Protein: 21.5 g

If you take that an add a 50/50 mixture of clam juice & spicy hot V8 you have a quick & easy Mexican shrimp cocktail. I love the stuff.

On how much of each ingredient is pretty much up to u so I don't have an exact for each.

Orange roughy (fish)

Crab meat

Shrimp

Avocados

Cucumbers

Red onion

Cilantro

Limes(some ppl use less lime juice)

Olive oil(optional)

I cut the Orange roughy and crab meat into small pieces and place in a bowl. I add lime juice of about 15-20 limes to fish and crab meat. Cover and set in fridge for about 2-3 hrs. Stir every once in a while.

Then I boil shrimp with a little salt.

I cut cucumbers, onion, and avocados into small pieces. Then add it all together to fish and crab meat. Then add salt and cilantro ti taste. Olive oil 1-2tbsp just depends if u want to add. Then cover the bowl and set in fridge for at least 1-2hrs. Mix it around a couple of times. The longer it all sits mixed the better it tastes! I luv to make it and serve it next day but that's us!

Fiddleman, just curious--are poblano peppers pretty hot? I might have to reduce or eliminate them if they're hotter than say, wasabi paste that you get with sushi. I looooooove avocado and shrimp. The whole recipe sounds mouthwatering, thank you for sharing!

Poblano peppers are just a tad hotter than bell peppers. You will notice a little bit more of a kick, but again, not much. It would be nowhere near what wasabi does. The nice part of this recipe, in addition t it being really refreshing, is that it is super high in Protein per serving.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
