I just made the most delish low carb zucchini lasagna! You just use strips if zucchini instead of noodles! It was so good and my family loved it!!!

Brown up a pound of ground beef. Add onion and garlic and sauté for a bit. Add can of spaghetti sauce and season with salt pepper oregano basil and bay leaves. Simmer as you prepare the rest.

Peel and slice thinly your zucchini and set aside. Use a container of ricotta cheese and mix it with an egg and the same seasonings as above minus the bay leaves.

Get a rectangle baking dish and scoop some of the meat sauce on and spread it around and the layer with zucchini. Spread the zucchini with the ricotta cheese and then layer with meat sauce. Add another layer of zucchini and repeat. I did three layers. On the last layer top it with mozzelrella cheese and bake. 400 for 15 min and broil for 5min.

Yum, I love zucchini lasagna - I add mushrooms and I use ground turkey mixed with ground turkey sausage sometimes. You can also do something similar with eggplant, you just need to salt and drain the sliced eggplant first.

Oh that sounds good with the turkey sausage. I've never had turkey sausage before lol. I also love egg plant too:)

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
