A yummy and healthy chicken salad idea

Mix together salad bag mix, sliced beets, crumbled goat cheese, diced walnuts and garlic chicken. Very yummy and full of flavor, especially the beet and goat cheese combo.

You can buy the garlic chicken from costco in packs of 6 garlic chicken skewers. They naturally break apart into 3-4 chicken chucks per skewer, you can break them down further depending on desired size.

This sounds DELISH - it has many of my favorites - goat cheese, beets, & garlic chicken! Thanks for the idea. I know what is for lunch or dinner tomorrow.

I have not had beets in years. I got to put them on my grocery list. Do you buy them fresh, canned, or frozen?

They are cooked ready to eat beets from costco. I swear I keep costco in business with all the things I buy from them. :)

If you have the time or desire, you can roast fresh beets in your oven. I like to lightly coat them with a small amount of olive oil and sprinkle with a little salt and pepper. I usually go for a moderately hot oven (400) if I'm doing them by themselves, but you can generally go at whatever temperature other stuff in the oven is going. Just check them periodically until they are your desired doneness. I usually cut mine in halves or quarters and check them starting at about fifteen minutes to turn them. You can get the other colors of beets and mix it up for variety, and they are so tasty freshly roasted!

Thanks for the tips on roasting. I am getting better at this whole cooking thing post op to avoid processed stuff. Still a newbie in the kitchen. :)

      Just been waiting until time for my consult with my bariatric surgeon. It's scheduled for Jan 9th. Turns out I won't actually be seeing him. Apparently it'll be with his P.A.             Not sure what to expect. I thought this is where the surgeon would discuss the best surgery option for me. For years I had my heart set on the sleeve, but I've read so many people have issues with reflux - even if they've never had it before - that they've had to be revised to the bypass. I already deal with GERD & take 40 mg of Omeprazole daily, so I started studying about bypass and honestly, it seems like it might be the better choice for me. How can we discuss surgery options if the surgeon is not there?
      What happened at your first consult? Trying to get an idea of what to expect, or maybe I should say, what NOT to expect.
