AmandaRaeLeo 2,146 Posted March 10, 2013 A good sub for mashed potatoes postop? Thoughts please? I'm trying to think of a variety of good heathy eats for me. Amanda Rae
pantala 125 Posted March 10, 2013 Amanda, in my Atkins days I played with cauliflower a lot. To be a remote sub for mashed potatoes, you will want to drain as much Water off as possible after cooking and mashing. I used a strainer. You can re-heat in the microwave. Of course butter and sour cream help But that was on Atkins. I used seasoned salt too. Hope that helps!
joatsaint 2,814 Posted March 10, 2013 I eat pureed cauliflower, instead of potatoes, but I wouldn't recommend it for at least 6 weeks post op. It is very fibrous and my stomach didn't really tolerate it until well until after week 6.
*Dean* 1,594 Posted March 10, 2013 Depends how low carb you want to go Amanda but I have a bit of (dry) roasted sweet potato. I keep some in the fridge and will chuck it in with some tuna or a salad etc. I don't mind that it has some carbs because I don't eat bread or Pasta anymore. Momonanomo 534 Posted March 10, 2013 I put cauliflower through the food processor as a sub for mashed potatoes when I was on WW. I liked to add garlic, and laughing cow lite helped make it creamy without adding butter. I even fooled some folks at thanksgiving one year thinking it was the real deal. Yum. But yeah, it is a pretty 'stout' veggie so you might wanna wait a bit.
AmandaRaeLeo 2,146 Posted March 11, 2013 Wow! All these suggestions sound so yummy. I appreciate the suggestion to wait awhile after surgery. I will do just that. And then I will enjoy trying these ideas out. Amanda Rae

BigDaddyJoe 246 Posted March 16, 2013 I used to 'rice' cauliflower in a food processor when I was on Atkins. A great substitute for rice, and you can use it in any dish you would normally use rice for.
Nicolanz 1,484 Posted March 16, 2013 I use it for rice and mashed potatoes. For mashed potatoes I put garlic powder and low cal chive cream cheese and mash it with a fork. It's really good!
NurseGrace 509 Posted March 16, 2013 Ideally we really don't want to be eating mushy stuff but if you are craving potatoes I think its OK to do that once in a while. Not every day is going to be picture perfect lean Protein first, nonstarchy veg (solid) I say go for it, just not every day.
wcn1970 239 Posted March 19, 2013 *^^ not everyday for mashed cauliflower? Cauliflower is not a starch. My post surgery dietician suggested it from purée stage on. You can blend protien into it with no taste difference.
