Best brownies ever

I posted a brownie recipe blindly a week or so ago, but when I made them they were awful. So I went looking for another and made these today. They are awesome. Fudgy, chewy, and If you didn't tell anyone they would never know they were low carb. I will say if your not a fan of flax seed meal you can use almond meal instead. The flaxseed does taste kind of like grass by itself but in the final product you can absolutely not taste it. My only gripe is the seeds in the brand I bought were not ground as fine as I would prefer. Easy fix just run through a food processor, or coffee/pepper grinder. If you don't have erythritol, truvia is made with it. Whole foods sells the powdered brand suggested (zsweet, and Now). I used Splenda as the secondary sweetener. You could also experiment and add sugar free chocolate chips, or Peanut Butter. Try them you won't be disappointed.

1/4 lb butter (1 stick)

2 cups erythritol (powdered, not granulated)

1 Tbsp vanilla

4 eggs (room temp is best)

1/2 cup cocoa

1 tsp salt

4 oz unsweetened chocolate, melted

2 cups flax seed meal

1 Tbsp baking powder

1/3 cup cream

2/3 cup Water

1 cup artificial sweetener

1 cup walnuts (optional)

Preparation:

Preheat oven to 350 F and grease a 9X13 pan.

1) Cream the butter until fluffy.

2) Add the erythritol to the butter and cream them together until fully combined (aim for a fluffy texture). Will appear almost like wet sand.

3) Add the vanilla and beat the eggs into the mixture, one at a time.

4) Add salt and cocoa, beat well.

5) Add chocolate, beat until fluffy.

6) Add the rest of the ingredients and mix well to combine.

7) Pour into a pan and bake for 35 to 40 minutes until top springs back. (You can also test if they're ready by sticking a toothpick in the brownies. If it comes out clean, or almost-so, they're done.)

8) Cool, then cut into 32 squares. If you cheat and eat one warm, know that the texture will be different once completely cool. That's when they become like real brownies. (They are even better the next day.)

Nutritional Analysis: Each of 32 brownies has 1 gram effective carbohydrate, plus 3 grams of Fiber, 3 grams of Protein, 10 grams of fat, and 107 calories.

This recipe sounds great. How long did u wait to eat these ? The choc and butter would make me nervous. Sorry , I know I sound like a weirdo!

I let them cool overnight. The butter is unsalted. Im sure you could use margarine if you wanted. chocolate was unsweetened also.

Help! The only brownies I've ever made have been from a box and I have no idea how to cream butter...I searched but the only info on creaming butter includes sugar.... so how do you cream butter without sugar? Anybody who knows please chime in!

You put it in a mixing bowl and mix on med speed. It is the same as with sugar only omitting the sugar. Good luck with the brownies.

Thanks so much ..... sorry if it seemed like a dumb question but all the instructions noted that the sugar aerates the butter and other baking terms that I cannot remember :) ....I thought I needed something else in place of it...

Sugar will aerate the butter but by mixing the butter first it softens the butter making it blend more easily into the other ingredients as you add them.

You can order it online. Whole foods also carries it. I listed the brand names in the original message. Truvia also has erythrital in it.
