Chellemetime 299 Posted January 31, 2013 This is something I made last night for dinner. My husband and daughter loved it and my son came over and ate 2 helpings. For those not on a "diet", they could eat it with some tortilla chips and it would be good too. I'm not big on measuring so I'm just going to give you the ingredients because it's simple and easy to make. Mexican chicken Casserole Non Stick Spray (I used Olive Oil Pam) chicken Breast Cut into cubes Chopped Onion Chopped Bellpepper Mushrooms Comino Cilantro Chives (Optional) Mild Red Enchilada Sauce Non-Fat Plain Greek Yogurt 2% Mexican Blend or Monterey Jack cheese Spray pan with Non-stick spray. Over medium high heat, saute the chicken breast, onion, bellpepper, mushrooms, comino, cilantro and chives together until the chicken is done and the vegetables are soft. Add enchilada sauce and Greek yogurt to make a creamy sauce. It should be light red in color but not pink unless you like it really light. Cover and allow it all to simmer for about 5 minutes on medium low heat. Top with cheese, remove from heat and cover to allow cheese to melt. Serve with more greek yogurt as a substitute for sour cream. Let me know what yall think.
