Looking for a good low-calorie quiche recipe

Just got cookbook so have no tried this yet. Sounds good!

3/4 c mushroom

1/4 c shallots

2 10oz packages frozen chopped spinach (thawed and drained)

1tbs Water

1/4 cup egg substitute

1/2 cup skim milk

1/2 cup low fat Swiss cheese

1/4 tsp ground nutmeg

Makes 4 servings (normal not ours)

Check this site out. I made the ham, egg & cheese mini muffins and froze them. I take 2-3 out and microwave them for about 45 seconds...great for quick Snacks.< /p>
