Made the "Infamous" Ricotta Bake

I wonder if it would work with cottage cheese? I always used cottage cheese in lasagna. Hmmmm

Baked ricotta

8oz ricotta

1/2 cup grated parmesan cheese

1t. Italian seasoning

1lg egg

Salt and pepper

1/2 cup marinara sauce (I used 1/2 cup sun dried Tomato alfrado sauce

1/2 cup low fat mozzarella cheese

Mix ricotta cheese,parmesan cheese, beaten egg, and seasonings together. Place in oven dish pour sauce over top then top with mozzarella cheese. Bake 450 for 20-25 min. 6 servings 88 cal. 4 fat. 3.3 carbs and 9.2 Protein

I tried cottage cheese it was very runny! Ricotta much better.

i cooked mine in a small glass baking dish and cut it into pieces after the cheese cooled. u can cut it into 4 servings if you can tolerate eating that big of a serving or 6 smaller servings.

Thank you so much :lol: I am totally craving real food. I have been eating Tomato Soup because it is the only thing that appeals to me and this sounds so much better!

I mixed cottage cheese and shredded mozzarella into the ricotta as well. Loved it! I used to make stuffed shells but added cooked ground beef and sausage. Which I am going to do once I can eat solids! Minus the Pasta shells of course.

Muffin pans is a good idea. What size was your baking dish? And does it turn out gooey or more stiff?

What's the serving size? Do u bake it in a regular 6muffin tin or a mini muffin tin 12 or 24 muffin tin pan?

Adding ground beef or sausage to the ricotta bake sounds good. I'm going to do that :)

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
