hinportland 83 Posted January 12, 2013 Tofu lasagna noodles (different, but an acceptable substitute, and very low cal!) 2 1/2 cups Marinara sauce Filling: 1 cup Shredded chicken (cooked) 1/2 cup Parmesan cheese 1 cup Mozzarella cheese 1 pint Ricotta cheese 10 oz Frozen Spinach (thawed and squeezed to remove moisture) 1 egg Mix all the filling ingredients together. Spoon 1/4 - 1/2 cup on the end of each noodle, roll up, place in baking dish sprayed with non-stick cooking spray. Pour marinara sauce over the top. Cover and bake for 30 minutes. This would probably be great with delicious pesto sauce if the marinara upsets your stomach. 1 Ljp reacted to this

hinportland 83 Posted January 12, 2013 I have found Tofu noodles in the Veggie section near the bean sprouts. They might have a better selection at an Asian grocery store. Good luck! 1 Lisa'slosinit reacted to this

Keepgoing247 116 Posted January 12, 2013 Most stores carry Dreamfields. You can go online to their website and print a $1.00 coupon. They have speghetti, angel hair, elbow, ziti, lasagna, and a few other types. Also online are some great recipe ideas.
hinportland 83 Posted January 12, 2013 Thanks for the tip! I'll look for them. Probably better than tofu noodles! :-)

hinportland 83 Posted January 13, 2013 Where do you find Tofu lasagna noodles? Different grocery stores carry different types, but I find it in the veggie section near the bean sprouts. If you have an Asian market you might have better luck.
